There’s something special about outdoor cooking that brings people together, ignites the senses, and creates an atmosphere of celebration. What is a party without a braai ?

Here’s a recipe for a delicious braaied (grilled) leg of lamb:

Braaied (Grilled) Leg of Lamb

Ingredients:

– 1 leg of lamb (approximately 3-4 kg)
– 4 cloves of garlic, minced
– 2 tablespoons fresh rosemary, chopped
– 2 tablespoons fresh thyme, chopped
– 1 teaspoon soy sauce

– Juice of ½ grapefruit /lemon
– 1/4 cup olive oil/vege oil
– Salt and pepper to taste

Instructions:

  1. Prepare the marinade by combining the minced garlic, chopped rosemary, chopped thyme, lemon juice, olive oil, salt, and pepper in a bowl. Mix well.
  2. Place the leg of lamb in a large dish or a resealable plastic bag. Pour the marinade over the lamb, ensuring it’s evenly coated. Massage the marinade into the meat, covering all sides. If using a dish, cover it with plastic wrap. If using a bag, seal it tightly. Marinate the lamb in the refrigerator for at least 4 hours or overnight for the best flavor.
  3. Remove the lamb from the refrigerator and let it sit at room temperature for about 30 minutes before grilling. This allows the meat to cook more evenly.
  4. Preheat your grill to medium-high heat. If using charcoal, wait until the coals are white and glowing.
  5. Remove the lamb from the marinade, allowing any excess marinade to drip off. Reserve the marinade for basting.
  6. Place the leg of lamb on the grill, fat side up. Close the lid and grill for about 15 minutes to sear the meat and lock in the juices.
  7. After 15 minutes, flip the lamb over and baste it with the reserved marinade. Close the lid and continue grilling for another 15 minutes.
  8. Reduce the heat to medium or move the lamb to a cooler part of the grill. Continue grilling, turning and basting every 15 minutes, until the internal temperature reaches your desired level of doneness. For medium-rare, cook until the internal temperature reaches 135°F (57°C). For medium, cook until it reaches 145°F (63°C). Use a meat thermometer to check the temperature at the thickest part of the leg.
  9. Once cooked to your liking, remove the leg of lamb from the grill and let it rest for about 10 minutes. This allows the juices to redistribute throughout the meat.
  10. Carve the leg of lamb into thin slices and serve hot.
