So one of my mum’s favorite go to tea time meals is sweet potato/ mbambaira. They are so delicious and also filling. It can be a meal all by itself. Part of the potato family but more on the sweeter side of life. They are usually large, starchy, sweet-tasting, tuberous roots ,classified as a root vegetable. The young leaves and shoots are sometimes eaten as greens or made into a tea(which is actually not bad with a little bit of honey).
There are many ways of preparing these, the popular one being the boiled version. So here is a simple easy, quick one i did with some boiled sweet potatoes. quantities are subject to how much one is willing to consume,either as a snack or a whole meal..lol
Roasted/ Fried Sweet Potato
Ingredients
- 3 large sweet potato
- 1/4 tsp mixed herbs
- 1/4 tsp salt
- 1/4 tsp black pepper
- oil, for frying/ lining the roast pan
Instructions
- Boil the sweet potatoes till just tender.
- Optional to keep the skin on or to peel them. Slice into rings or cubes.
- Lightly grease a pan , place the sweet potatoes. Season and toss so they are lightly coated.
- Bake at 180C till crispy and cooked through.
If you do the fried option, which i did in this one, heat some oil in a pan. Fry the potatoes till crispy and golden then toss in the spices. Serve hot as a snack or as a starch to your meal.
