So i don’t know if anyone else goes through this, but in our house, when it comes to fruits, they do not last for long, especially bananas. We have a few banana trees in our backyard and they produce the most amazing ,sweet , delicious kind of bananas. Not your average sized ones , these are smaller but they pack in a lot of energy. So when my dad brings in a batch, you have got to be ready to book your batch , otherwise there will be none left. So i got lucky one time and i made this delicious, moist, fluffy , banana bread. Now, just like the fresh bananas, this is another tea time treat that does not even last a day,lol. Well…here is your chance to try it out. Happy baking!

BANANA BREAD

INGREDIENTS

  • 3-4 large bananas
  • 1/3 cup butter, melted
  • 3/4 cup sugar
  • 1 egg
  • 1 tsp vanilla essence
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp cinnamon powder
  • 1/8 tsp salt
  • 1 1/2 cups flour
  • 1 cup chopped nuts, plus extra for topping (optional)

METHOD

  1. In a large bowl,mash the bananas with a masher or a fork.
  2. In another bowl put all the dry ingredients together .
  3. Add in the melted butter, sugar , eggs and vanilla essence to the bananas.
  4. then add the dry ingredients.
  5. Mix till just combined, do not over mix.
  6. Pour mixture into a prepared loaf tin. This recipe usually make 1 small loaf tin.
  7. Bake at 180C , for about 20-30minutes , or until cake tester comes out clean.
  8. Let it cool for 10min in the pan before turning out to completely cool on a wire rack.
  9. Serve as desired. I usually like putting some butter or jam on mine.
