Here is another idea for that leftover rice. Or looking to spice up the rice with some color and flavor? Why not try some delicious beetroot rice. Don’t be put off by the color or strong flavour of the beetroot. I honestly enjoyed this one . Have a go at it..
Ingredients
1 cup (grated) beetroot
2 cups cooked rice
1 (small) onion
2 green chilli (for some extra heat)
1 tbsp ginger powder
1 tsp black pepper
Salt – to taste
2 tsp oil
1 tsp garlic powder
Bay leaf – 1
1/2 lemon
INSTRUCTIONS
1. First cut the onions into thin slices, slit the green chilies and grate the beetroot. Heat a pan with oil, add the spices, let it fry in the oil for 30 secs.
2. Next add the onions & chili. Saute till the onions becomes translucent, then add the grated beetroot, saute the beetroot till it cooks.
3.Keep the cooked rice ready. Once the beetroot is cooked, add the salt and give it a good mix.
4. Gently mix in the rice with the beetroot and finally squeeze the lemon. Switch off the flame, and its ready to serve
Notes:
- You can use left over rice also for this beetroot rice.
- I have already added salt while cooking the rice, so while sauteing, just added salt for the beetroot alone.
- Depending on beetroot sweetness and your preference, you can adjust the green chili and also if you want more spice, add 1/2 tsp of red chili powder also.
