It has been a while since i posted something and the truth is, it’s hard sometimes to find inspiration to write or create. Also when you have a 17month old child to mind as well, time just goes by so fast. Some days I never even see where the days go. All I see is diapers, laundry ,dishes and thinking.. “Did I not just clean the house?”, looking at all the toys thrown all over the house. Motherhood is a journey that you learn each and everyday. As I lay on the floor while my little one was using me as a trampoline, I became snacky-ish. My go to would be a simple sandwich but this time I was craving pancakes. And what better way to use up the Bananas before they are totally gone. I decided to add Bananas and chocolate into it for a natural sugar and deliciousness (but feel free to add sugar for that extra sweetness. But for now let me introduce you to the Chocolate Banana Cupcakes!

Here is a simple quick recipe for you to follow. Your children will love it to. Feel free to add other fruits that the children love, e.g. grated apple instead of banana.

Chocolate Banana Pancakes

Ingredients

1 ½ cups all purpose flour

2teaspoons baking powder

¼ teaspoon salt

2 ripe bananas,mashed

2 tablespoons melted unsalted butter,or vegetable oil (plus more for greasing pan

1 large egg

¾ cup milk

¼ cup packed brown sugar,(add for extra sweetness)

1 teaspoon vanilla extract

¼ cup chocolate chips

To serve: , butter, maple syrup, sliced banana, walnuts, and/or chocolate chips

Method

  1. In a large bowl, combine flour, baking powder, and salt.
  2. In a separate bowl, whisk mashed banana, butter, egg, buttermilk, brown sugar(optional), and vanilla. Add the wet ingredients to the dry and stir with a rubber spatula or wooden spoon until combined, being careful not to overmix. Lightly mix in the chocolate chips
  3. Heat a large pan over medium-low heat and grease with butter. Drop the batter in approximately ⅓ cup portions onto the pan ,depending on the size you want , spreading out the batter to form even circles.
  4. Cook until bubbles begin to form (it might be hard to see the bubbles because the batter will be thick). Flip and continue cooking until cooked through (another couple minutes).
  5. Be careful not to turn up the heat too high, as you want the pancakes to cook slowly so that the outside doesn’t cook faster than the inside.
  6. Serve hot with butter and syrup and a few slices of banana as garnish. Enjoy your Chocolate Banana Cupcakes!
