Not sure what to do with your leftover rice? Here is an easy quick recipe you can do just for that! Also less of a mess with the kids, you know how messy it can get. Perfect for those leftovers and also a fun way to incorporate veggies into it too. Can be served warmed or at room temperature.

These are also a good idea for the lunch box, keeping the meals lively for the little ones. Lets see what we will need.

Rice Cups

Ingredients

  • 2 cups cooked rice (leftover is best)
  • 3 eggs
  • 1/2 cup green beans , chopped
  • 1/2 cup cubed carrots
  • 1/4 cup plain flour
  • 1/4 cup onion
  • 1/3 cup soy sauce
  • 1 tsp. ground ginger
  • 1 tsp fresh rosemary, finely chopped
  • 2 tsp. chopped chives

Instructions

  1. Preheat oven to 200 C degrees.
  2. In a bowl, whisk eggs. Add flour, soy sauce, and ginger. Mix until smooth then add remaining ingredients.
  3. Spray muffin tin with cooking spray or brush with oil and spoon the mixture into the cups. Fill about 3/4 way.
  4. Bake for 20minutes or until firm to the touch.
  5. Remove from the oven and serve as desired.

Tips:

  • Choice of vegetables is optional, as long as they are cut small enough to fit in the muffin tray.
  • You can opt to make a tray of these and slice up into slabs.
