Rice Cups
Ingredients
- 2 cups cooked rice (leftover is best)
- 3 eggs
- 1/2 cup green beans , chopped
- 1/2 cup cubed carrots
- 1/4 cup plain flour
- 1/4 cup onion
- 1/3 cup soy sauce
- 1 tsp. ground ginger
- 1 tsp fresh rosemary, finely chopped
- 2 tsp. chopped chives
Instructions
- Preheat oven to 200 C degrees.
- In a bowl, whisk eggs. Add flour, soy sauce, and ginger. Mix until smooth then add remaining ingredients.
- Spray muffin tin with cooking spray or brush with oil and spoon the mixture into the cups. Fill about 3/4 way.
- Bake for 20minutes or until firm to the touch.
- Remove from the oven and serve as desired.

Tips:
- Choice of vegetables is optional, as long as they are cut small enough to fit in the muffin tray.
- You can opt to make a tray of these and slice up into slabs.
