I love potatoes in any form and my favourite being the mashed version. Most cases, I always have some mash leftover. Besides just having another serving another day, I always like to try and make it a little more interesting. This time we are doing potato cakes and here is a simple recipe for it.
Ingredients
- 4cups left over mash
- 1 diced onion
- 1tsp Crushed garlic
- 1 cup cooked Carrots diced
- ½cup cooked peas
- 1 cup crumbs
- 1 egg
- Seasoning (salt, pepper, herbs)
- Oil to fry
Instructions
- 1. In a bowl, mix the mashed potatoes, garlic, onion, vegetables (can add any of your choice), crumbs, seasoning and egg. Mix till combined.
- 2. Flour your hands and form portions of the mixture into sizeable rounds. If the mixture is too sticky add a few more crumbs.
- 3. Heat some oil in a pan. Fry till golden and flip over. Drain excess oil on some paper towel.
- 4. And there you have it.. Can be served with your choice of sauce and protein. Enjoy your potato cakes!
